The new restaurant, led by Executive Chef and namesake, Robin Wickens, will continue to be dedicated to using produce from the Royal Mails own kitchen gardens and farms as well as supporting many regional producers.
Other elements of the project include doubling the capacity of the hotels casual comfort food offering, Parker Street Project, and renovated hotel Reception area.
“We are delighted to embark on this major project which will bring more visitors and encourage them to stay longer, which in turn supports other local businesses. Western Victorian residents will now have wider choice of venues to relax, catch up with friends and enjoy great food and wine in” said Mr Mark Whitnell, General Manager. “The team here are very skilled and passionate about food and wine and hospitality. They are extremely excited to be part of the next evolution of the business” Mr Whitnell added.
